We started last month with Bavette Grill and this month we are heating things up with Mesero at Legacy West in Plano, TX. Throughout the series, we’ll hear from these tastemakers in our community and discover where their passion comes from. Here on the Plano Insiders blog, we’re going to take you behind the scenes every month!
Let’s go to Mesero!
Meet Fernando, Mesero’s manager who treats everyone he encounters as family. He started as a busboy and fell in love with food and beverage – and Mesero, where he was determined to rise through the ranks. He’s fully bilingual and radiates that welcoming feeling Mesero is known for.
The cuisine at Mesero is Mexican-inspired with flavors that have deep cultural roots. The Pollo Mateo, for example, is slow-roasted chicken in a green tomatillo sauce with red and green bell pepper and onion served along side cilantro rice. For enchiladas, a popular option is their Rojas enchiladas with two chihuahua cheese enchiladas with a red sauce, and cilantro cream served with a side of cilantro rice. From carne asada and brisket to chicken and carnitas, they offer several taco options. A favorite is their Camarón tacos with sautéed garlic shrimp, roasted poblano, onion, chili aioli, and Mesero slaw. Don’t skimp out on dessert! The Cinco Leches cake is truly the grand finale to a great meal.
For Fernando, his favorite dish at Mesero is one he enjoyed as a child – Chile Colorado.
Chile Colorado is slow-roasted pork with guajillo chile, onion, poblano and red bell pepper, and is traditionally a breakfast dish that is served with homemade tortillas. Fernando remembers waking up each morning to the sound of his mother “clapping;” preparing the masa for the tortillas that she always made fresh. So this dish is very special to him. It reminds him of home – and it’s the one dish he eats nearly every day.
Chile Colorado is one of those dishes that not everyone gets right. It’s got to have the balance of spice and flavor that makes it a memorable dish – just like at Mesero. Bon Appetit calls it the greatest recipe of all time. Every chef makes it a little differently – but it’s definitely a winter time comfort food.
